If arriving in winter, allow enough time to have a look round some nearby attractions, eg Nobby's Lighthouse, beaches, Fort Strachley, Foreshore Park before the sun goes down! I would aim to get there by 3-4pm at the latest to do some of these.
Port Stephens, also known as Australia's blue water paradise, is just 2.5 hours north of Sydney on the NSW coast. Visit the local bottlenose dolphins and swim in crystal clear bays with golden sand.
Visit Australia's oldest wine producing area. Taste world class wine and talk to family winemakers who have been producing authentic Australian wine for generations.
